Cod with Squash in Spicy Tomato Sauce is cooked in a vibrant sauce cleverly crammed with a whole bunch of vegetables: in addition to tomatoes, there’s diced butternut squash and sweet pepper in there, along with a few capers mashed into the mix. Round it all out with wee orzo pasta flecked with leafy greens.



  1.  In a medium-sized skillet, sear cod over medium-high heat in oil for 3 to 4 minutes per side, or until it begins to flake with gentle pressure.
  2. Meanwhile, add garlic, Thai chilies, tomatoes, squash, and fish sauce to a medium pot. Simmer over medium heat until squash is tender, but not overcooked.
