  2. Line sheet pan with parchment or foil. Spray with non-stick spray.
  3. Combine cumin, coriander, turmeric, salt, and pepper to make shawarma seasoning.
  4. Pat dry tofu and slice into ¼-inch thick planks. Cut each plank into thirds and then place it on the sheet pan. Sprinkle with shawarma seasoning.
  5.  Bake in the oven for 4 to 5 minutes, and then gently turn the tofu over with a spatula; continue to cook for about 4 to 5 minutes.
  6. Meanwhile, make tzatziki. Drain and squeeze excess moisture from the cucumber.
  7. Combine with yogurt and garlic; mix well. Refrigerate until ready to serve.
  8. For one portion, make wraps using 9 oz. of tofu with 5 lettuce leaves, ½ cup tomatoes, and 2 tablespoons of tzatziki.
